Latvian farmers’ breakfast

Farmers’ Breakfast means Farmers’ Breakfast. It’s simple and filling, using what’s on hand. The perfect start to the day.


  • 2 boiled potatoes
  • 3 scones
  • 1 egg
  • bowls
  • oil
  • pepper


  • Cut the potatoes into chunks, the zucchini into rounds. Fry everything in heated oil.
  • Add salt, pepper, mix everything.
  • Make some space in the middle of the pan, crack in the egg and fry until it is set – do not fry.
  • When ready, sprinkle with the chopped chives and serve. Enjoy!
