Launch of the delicious Latvian apple pie tradition

Latvian apple pie, also known as “apple pie”, is a traditional dessert in Latvia that has been enjoyed for generations. The pie is usually made from butter pastry filled with a sweet and sour apple filling made from locally grown apples. The pie is then topped with a crispy pastry topping, which gives the dessert a delicious crunch and texture.

Latvian apple pie is a staple dessert in many Latvian families and is often enjoyed on special holidays and celebrations such as Christmas, Easter and Midsummer’s Day. It is also available in many cafés and bakeries throughout Latvia, where it is served as a popular dessert. Latvia’s apple pie is not only delicious, but also reflects the country’s rich culinary history and traditions.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup cold butter, cut into small pieces
  • 1/4 cup sugar
  • 1 egg yolk
  • 1/4 cup cold water
  • 4-5 large apples, peeled and thinly sliced.
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons butter, cut into small pieces

Cooking:

  • Preheat the oven to 190°C.
  • In a large mixing bowl, whisk together the flour, sugar and butter. Using a pastry blender or your fingers, mix the ingredients until they resemble coarse crumbs.
  • Add the egg yolk and cold water to the mixture and stir until a dough forms. Knead gently until the dough comes together like a ball.
  • Turn the dough out onto a floured surface to about 1/8 inch thickness. Place the rolled out dough in a 9 inch pie dish and cut off any excess dough along the edges.
  • In another bowl, mix the sliced apples, sugar, cinnamon and lemon juice until the apples are evenly coated.
  • Arrange the apple mixture on the pastry in the pie dish. Dot the top of the apples with small pieces of butter.
  • Roll out the remaining dough to a thickness of 1/8 inch. Cut the dough into thin strips and arrange them in a grid on top of the apple mixture.
  • Bake the pie in the preheated oven for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
  • Remove the pie from the oven and leave to cool for at least 30 minutes before serving.
