Heavenly manna… Have you ever wondered why this dish is given such a poetic name? We whip together Latvian cloud pastilles and get a heavenly taste with the lightness of clouds.
The preparation of the dish itself is quite simple – the secret lies in the churning process. Our grandmothers used a wooden spoon to thresh rhythmically, but in our fast-paced century we have switched to a mixer, but even with that we can only get the lightness of the dish if we know how.
This sweet dish is suitable for every season – just change the seasonal berries and look, another taste!
Served with cold milk, it gives an almost happy feeling.
- 200 g cranberries
- 200 g sugar
- 100 g semolina
- 1 litre of water
- Read and rinse the cranberries. Pour a little warm water over the cranberries (so that the water covers the berries) and blend everything into a smooth paste.
- Pass through a sieve, add the sugar and the remaining water. Bring everything to the boil. Stir in the semolina and cook, stirring constantly, for a further 5 minutes.
- Cool the resulting berry semolina to about 30oC. If it is necessary to prepare the sweet dish quickly, place the saucepan in a bath of cold water. If there is time, allow the mixture to cool on its own. Cook. Start with the mixer on low speed and gradually increase the speed. The longer the churn, the more airy, crisp, light and, finally, tasty the sky manna will become.
- Serve with cold milk. First pour the milk into the bowl and then carefully spoon the beautiful islands of sky manna into the bowl.
